Tips for Sifting
Flour -
Sifting removes lumps and aerates the flour so it can be incorporated more easily into batters.
Sifting reduces the overall amount of flour in terms of weight.
If a recipe calls for 1 cup of sifted cake flour it weighs about 3 oz whereas 1 cup of flour from a bin weighs 4 ounces. Even an additional ounce of flour can cause a cake to be drier and bake with a domed top instead of a flat one.
Cocoa Powder –
Recipes that call for cocoa powder often need sifting. Sifting breaks small clumps of cocoa that form as the powder sits in the package. Sifted cocoa can be evenly distributed throughout a cake batter.
